I made these Paleo banana bread muffins last Friday and after posting them to Snapchat and Instagram stories, I had quite a few people message me to ask for the recipe, so I thought I would just post it here for everyone!

If I'm being completely honest, we haven't been doing a very good job when it comes to clean eating.  I've been cooking some of my favorite Paleo recipes at home, but we've been trying quite a few new restaurants and going out with friends since our move.  While I've enjoyed trying new places and foods, I've really started to feel the effects of the sugar, dairy and grains in my diet.  So, last Friday I decided to bake a Paleo banana bread recipe to have a snack or quick breakfast on hand.  I originally found the recipe on Pinterest but changed it up a little bit based off what I already had in my kitchen.

Ingredients: 

4-5 ripe bananas

4 eggs

1/3 cup of coconut oil, melted

1.5+/- cups almond flour*

3 T arrowroot starch

1/4 cup honey

1 T cinnamon

1/2 t baking soda

1/4 t salt 

  1. Preheat your oven to 350 degrees and grease a 12-cup cupcake pan with coconut oil.  
  2. In a large mixing bowl, mash the bananas and mix in the coconut oil, honey and eggs until well combined.  (I used a whisk, but you could easily use a stand or hand mixer as well.)
  3. Add in your arrowroot starch, cinnamon, baking soda, salt and almond flour and mix well.  
  4. Fill all the cups of the cupcake pan and bake for about 30 minutes or until a toothpick comes out of the muffins cleanly. 
  5. Enjoy warm or at room temperature!  Mine lasted 3-4 days on a covered cake stand on our kitchen counter.   
*Add a little more or less depending on how dense you would like your muffins to be. 

Most Paleo recipes I've tried have been good in terms of flavor, but really lacked in all other areas.  This is by far the closest to the regular baked good recipe that I've made and was even Kyle approved!  I think if I would have just told him I made banana bread muffins and not that they were Paleo, he honestly wouldn't have known the difference.
